Dinner: baked potato pie

2 medium potatoes baked and then chopped (the next day or after some time in the fridge is just fine)

1/4 cup broth

2 T milk

1/4 cup grated cheese -- optional

2 bell peppers -- chopped

1 medium onion chopped

2 eggs

1 t salt

1 t seasoning (season salt, ranch or something else)

Mix everything together in a medium bowl and then pour into a greased pie pan. Bake 30 minutes at 400 degrees.

Let cool 10 minutes. Top with sour cream, sprouts and/or avocado. Enjoy!
