Creamy black bean salsa


 

Creamy Black Bean Salsa

4 cups

 

 

Ingredients

1-15oz. can black beans, rinsed & drained

1 ½ cups frozen corn, thawed

1 cup red pepper, finely chopped

3/4 cup green pepper, finely chopped

½ cup red onion, finely chopped

1 T. fresh parsley/cilantro

½ cup sour cream

¼ cup mayonnaise

2 T. red wine vinegar

1 t. ground cumin

¼ t. chili powder

½ t. salt

¼ t. garlic powder

1/8 t. pepper

 

Directions

In large bowl, combine beans, corn, peppers, onion & parsley/cilantro.

 

Combine sour cream, mayo, vinegar & seasonings. Pour over corn mixture & toss gently to coat. Serve with chips.
