Peel and chop a yellow sweet potato.
Peel and chop a medium onion.
Mix potato and onion together on a jelly roll pan. Sprinkle with oil/cooking spray and salt.
Put in the oven at 425 for 35 minutes.
When there is 10 to 15 min left, mix the veggies and added chopped zucchini or summer squash.
After the first 35 minutes is over, remove your veggies. Make sure the potatoes are very soft. For me, the real sweetness of sweet potatoes only comes out when they are fully cooked. Serve on a bed of baby spinach and top with sprouts. Pile on any other raw toppings such as avocado, raw sauces and dressing, beans, sprouted beans, or soft nuts.
For a more moist meal add more oil to the veggies and maybe a 1 teaspoon mix of soy sauce and balsamic vinegar. Or for more moisture add a favorite salad dressing or a raw cream sauce. In this dish, I like the moisture to come from the veggies, so the meal feels different than a salad.
If you are not used to vegetarian meals, I recommend a very large plate of food. As long as the amount of oil is low, you could eat lots of this meal and not run our of calories. And be patient, if your body is used to low nutrient or calorie dense foods, it could take about 10 days to start really feeling emotionally and physically satisfied by a major dietary change.
