Not sure why but this yummy meal is totally hitting my sweat tooth today. Maybe it is the white rice or the lime in the rice, but the flavors are really working for me. Now that I am back to (my wonderful) reality, it is back to cooking and cleaning and life as well.

Chile Stir Fry
Serves 2 parents -- and 3 children who might not eat it
1 yellow onion, chopped
1 T. coconut oil
1/2 a reb bell pepper, chopped
2 T. chopped pepper -- medium flavor -- anything in between jalapeno and bell
1/2 cup corn -- frozen or cut off the cob
1 can kidney beans -- drained and rinsed
1/4 t. chile powder
1/8 t. Cayenne pepper
1/4 t. cumin
1 t. salt
3/4 cup quinoa
1/2 white rice (brown does not cook at the same speed as Quinoa and would need to be cooked separately)
2 1/3 cups water
1 T. fresh lime juice
1 1/2 t salt
Start cooking the grains in the water as normal -- leave out the lime and salt.
Saute the onion in the oil, add the beans, corn, peppers, and spices.When the rice is almost done with only a little liquid left, add the lime juice and salt.
Serve on top a small bed of spinach or cooked greens, layer with rice and then stir fry.
