GF: gluten free zucchini muffins from Kristie


GF Zucchini Muffins
4 cups Pamela's Pancake Mix
5 tsp cinnamon
2 tsp salt
1 tsp nutmeg

4 eggs
1/2 cup oil
1 cup sugar
1 cup brown sugar
2 tsp vanilla
4 cups graded (small side of grader) zucchini 

In a small bowl- Mix pancake mix, cinnamon, salt, and nutmeg

In a large bowl- Mix eggs, oil, sugars, and vanilla for one minute on high

Add dry ingredients to wet bowl and mix, then add zucchini and mix

350 degrees for 18 minutes. 36 muffins. :)
