Dinner: My lentil soup

So by miracle this morning the house is clean and I had a few minutes before our play date. I thought it will be a good time to prepare some dinner or some food for the week. I didn't have any ideas, so I just scrolled through my recipe blog until something sparked my fancy. Lentil soup! I had about 100 recipes for lentils soup, but I don't think I've ever made lentil soup. Read some of the recipe is and then I remembered watching my friend wants a soup a few weeks ago. Here is what is brewing on the stovetop.

Lentil soup

1 1/2 cups lentil beans
1 cup chopped carrots
1 cup chopped potatoes 
One small white onion chopped
On small purple onion chopped
1 teaspoon chili powder
10 cups water
2 tablespoons chopped cilantro
2 teaspoons cumin
1 tablespoon beyond bouillon veggie
One large tomato chopped
One can tomato paste organic
1 tablespoon olive oil

Rinse your lentils. Lentils with 10 cups of water into a large pot and start boiling. In a frying pan sauté the onions the tomato the salon Truax with olive oil. Other veggies can be added to this mix like carrots or bok choy or celery or potatoes.

Once the lentils are boiling add the beyond bouillon and whisk. Then add the tomato paste and whisk. Add the sauté mix to the soup. Boil 20 minutes and then simmer as little or as long as you like. Make sure your lentils are fully cooked and then enjoy. Serve alone, on top of rice, or with bread.
