Dinners: lentil stir fry

One of the miracles of my trip to Wal-Mart yesterday was that they sell cooked lentils in the salad fixings section. I had these in PV when my sister made me an amazing salad. I used half the pack tonight to make this simple, yummy vegetarian dinner.

PS I bought them because I was missing my sister.

PPS it is snowing again.


Simple Lentil Stir-fry

1 and 1/2 cups cooked lentils
1 medium onion, chopped
1 tablespoon olive oil
1/2 cup veggie broth (or water and your favorite seasons like salt, garlic, and paprika)
1 red bell pepper, chopped
2 cups cooked rice or quinoa
Soy sauce for serving

Sauté onions in oil over medium heat. Add lentils before onions are fully cooked. Add broth 2 minutes after the lentils. Add peppers after the onions are cooked and removed from heat once peppers are hot but still firm.

Serve on top of rice and dash with soy sauce.
